Intake & Grape Selection

The REVO standard begins at the winery gate. Every incoming grape lot is evaluated against our intake specifications before it enters the cellar — Brix (sugar content) and titratable acidity are measured to confirm ripeness and build a precise profile for each batch. We accept only fruit that meets our minimum quality threshold. Grapes arriving at the winery are received cool — early morning delivery is required across all our supply arrangements — ensuring that fruit enters the crush pad at the ideal temperature for quality fermentation and maximum aromatic preservation.

Crushing & Must Preparation

Grapes are de-stemmed and gently crushed to minimize seed breakage and avoid the extraction of harsh tannins from the stems. For white wines, the juice is separated immediately from the skins — pressed cleanly to preserve freshness and floral character. For red wines and our port-style Zealy series, extended skin contact is employed deliberately to draw out color compounds (anthocyanins), structural tannins, and the phenolic complexity that defines a wine with depth and ageing potential. Controlled Fermentation

Fermentation is where chemistry becomes character. REVO uses selected yeast strains that have been specifically chosen and adapted for the Indian climate — strains that perform with consistency and precision in our ambient temperature ranges, producing clean ferments without off-aromas. All fermentation takes place in stainless steel tanks with jacketed temperature control: 15°C–18°C for white wines, which preserves delicate fruit esters and aromatics; 24°C–28°C for reds, which encourages extraction and structural development. For our Zealy fortified series, fermentation is deliberately arrested by the addition of a neutral grape spirit — locking in residual sweetness and halting yeast activity at a precisely calculated sugar level.

Clarification & Stabilisation

The final stage before bottling is where precision meets presentation. REVO employs cold stabilization to precipitate tartrate crystals under controlled low-temperature conditions — ensuring the wine remains clear and visually pristine at any serving temperature encountered across India's diverse climate zones. This is followed by multi-stage filtration: coarse filtration to remove gross solids, fine filtration to achieve clarity, and sterile filtration to ensure complete biological stability on the Indian retail shelf. Every batch is tested against our internal quality matrix before release, with a full Certificate of Analysis issued for all B2B supply batches.

Crafted from both table and specialty wine grapes sourced from Baglan's own vineyards, Vinstaana is fermented in temperature-controlled stainless steel and aged to allow flavors to fully harmonize. Zealy is REVO's most complex and indulgent expression — a fortified wine of depth, richness, and deliberate structure. Port-style in its architecture but unmistakably Indian in its character, Zealy is crafted for those who seek more from a glass: more sweetness, more body, more dimension.

The fortification process is a study in precise timing. During active fermentation, a carefully measured quantity of neutral grape spirit is introduced into the must — halting yeast activity at exactly the moment when the balance of residual sweetness and nascent wine character is optimal. The result is a wine with elevated alcohol, preserved natural sugars, and a richness that no dry wine can replicate.

Zealy then enters a specialized aging program, during which it develops its signature flavor profile: dark berries, dried figs, warming spice, and a long, velvet finish. It is a wine designed to be savored slowly — a digestif, a dessert companion, or a contemplative pour.

The REVO sparkling series is our namesake — and it earns that title fully. It is the wine that best embodies who we are: modern, energetic, celebratory, and unafraid to be different. REVO Sparkling is not made to mimic Champagne or Prosecco. It is made to define its own category within the Indian social occasion.

Produced using the Charmat (tank fermentation) method, a secondary fermentation is conducted in pressurized stainless steel tanks, trapping carbon dioxide naturally within the wine to create persistent, fine bubbles. High-quality still wine is used as the base, ensuring the effervescence builds on a foundation of genuine flavor rather than masking it. Natural fruit flavors are then integrated with precision — not to produce an artificial beverage, but to create a layered, vibrant, fruit-forward experience that resonates with the Indian palate.

Our Terroir

Terroir is the totality of what a place gives a wine — the climate, the soil, the altitude, the microclimate — and it cannot be manufactured or replicated. Baglan, within the Nashik district of Maharashtra, possesses a terroir that is genuinely exceptional, and REVO Sparklings was established specifically to give it the winemaking platform it deserves.

Nashik is already recognised as India's premier wine region, but Baglan's specific sub-regional character adds a further layer of distinction.
